Crushing the tongue against the roof of the mouth drives the food mass into the taste buds, and this clamping or sucking motion intensifies and prolongs the flavor.

혀를 입천장에 밀어 붙이는 것은 음식물 덩어리를 미뢰 속으로 밀어 넣는데, 이러한 꽉 죄거나 빨아들이는 동작은 풍미를 강하게 하고 연장한다. 

 

However, taste also requires the intervention of the brain which must recognize, evaluate, and categorize the stimuli from the mouth and nasal passages.

그러나 맛은 또한 입과 비강에서 오는 자극을 인식하고 평가하고 분류해야 하는 뇌의 개입이 필요하다. 

 

 

The evaluative quality of taste or the recognition and judgment of flavor can be processed only in the brain, and, as with the visual imagery of painting, the quality of taste is assessed in relationship to a history of tastes.

맛의 평가적 질이나 풍미의 인식과 판단은 오직 뇌에서만 처리될 수 있으며, 그림의 시각적 이미지에서와 마찬가지로 맛의 질은 맛의 역사와 관련지어 평가된다. 

 

The tasting subject frequently judges the outcome of the experience in opposition to or alliance with previous experiences of the same or similar tastes.

맛을 보는 주체는 자주 같거나 비슷한 맛의 이전 경험에 반하거나 연합하여 그 경험의 결과를 판단한다. 

 

This process might be defined as the “syntax” or “semiotics” of taste.

이 과정은 맛의 ‘구문론’ 또는 ‘기호학’으로 정의될 수도 있을 것이다. 

 

A chef or diner may rate a dish as “better” or “worse” than the last time the gustatory composition was prepared, or describe a new taste combination in relation to one that is familiar: “It tastes like chicken.”

요리사나 식객은 요리를 지난번 그 맛의 구성물이 준비되었을 때보다 ‘더 낫다’ 혹은 ‘더 나쁘다’라고 평가하거나 “그것은 닭고기 맛이 난다” 와 같이 익숙한 것과 관련지어 새로운 맛의 조합을 설명할 수도 있다.
